Growing up in the Apulia region, Italian born, Chef Francesca Fucci proposes a fresh and honest cuisine based on locally sourced ingredients. Highly creative and straightforward in approach, Chef Francesca allows each flavor to guide her philosophy.
Constantly in search of the freshest and elusive produce, she pushes the boundaries of traditional Nordic fare to create seasonal and artistic dishes from meat, seafood and vegetables that are bold in flavor and clever in technique. Hosts are on hand to interpret the revolving menu, which is led by the time of year and transforms every eight weeks to showcase an entirely new dining experience.
